Just wondering how I go about taking bits from tracks and placing it into my track layout, also how do you dull out any background noises from them, for instance if it has an orchestral sample behind the vocals?

It’s very hard to separate individual hits from songs… Have you checked out the ableton warping tutorials? Will help you with looping etc.
